Forty-Two more days at home

Although my ribs are still paining me, I am trying to put some effort into the “getting healthy” program.

I have been traveling and eat in restaurants.  Tonight, I COOKED.  I cooked a delicious, healthy, vegan meal.

Curried Tofu with Rice 

 1 pkg. (12.3 oz) extra-firm tofu, drained and cubed
1 Tbsp canola oil
1 small onion, chopped
3 garlic cloves, minced
½ cup light coconut milk
1 tsp curry powder
¼ tsp salt
¼ tsp pepper

  1.  In a large nonstick skillet, sauté tofu in oil until lightly browned.  Remove; keep warm.
  2. In the same skillet, sauté onion and garlic for 1-2 minutes or until crisp-tender.  Stir in the coconut milk, curry, salt and pepper.  Bring to a boil.  Reduce heat; simmer, uncovered, for 4-5 minutes or until sauce is slightly thickened.  Stir in tofu; heat through.
  3. Serve with rice.
